As part of our newly-launched chef profile series, The Log recently caught up with Tyler McMahan, executive chef of Poppy’s Crazy Lobster in Destin.

Log: Tell us about your culinary experience/work history.

McMahan: My culinary adventure started at Bay Café in Fort Walton Beach under Chef Julien LaRaunt. There I learned the basics of French culinary and found the passion of food and wine. Next, I went to Poppy’s Seafood Factory and studied under Chef Shane Quinlan and Chef Angus Hoffman. They helped me to perfect my culinary skills. The last four years, I was the executive chef for Tommy Bahamas in Orlando. Here I became the youngest executive chef the company ever had and was on the company’s menu development and concept development team. I finally got back home and am now the Executive Chef of the Crazy Lobster on the Destin Harbor.

Log: Where does your inspiration come from when creating dishes?

McMahan: My inspiration has always been my surroundings. I think restaurants should have menus indigenous to their location.  Being a southerner and on the Gulf of Mexico, the southern coastal ingredients influence all my food and flavors to come from our local farms and boats right here on our beautiful Emerald Coast.

Log: What is your signature dish and why?

McMahan: Right now my signature dish is Blackened Shrimp & Smoked Gouda Stoneground Yellow Grits with Tasso sauce. This dish just seems to stand out with new flavors and exciting combinations from the Cajun sausage to the pablano peppers we use in the dish.

Log: What famous chef do you admire the most? 

McMahan: Thomas Keller of the French Laundry in Napa Valley

Log: What is your favorite ingredient and why?

McMahan: My favorite ingredient is saffron. It brings out both color and flavor in your food. Although it’s the most expensive; a little bit goes a long way.

Log: What makes your restaurant like no other?

McMahan: First, would have to be our staff — from the front of the house to the back of the house, we have great people who want to provide the best food and service possible.  Second, would have to be the food. I think we are going to surprise everyone this year with our new menu. It’s fun, exciting, and different. Third, would have to be the view — located directly across from Norriego Point, overlooking the Gulf makes for a breathtaking fun dining experience.

But preservation is only one way to maintain a rural setting. When working farms close down, it is usually because they are not sustainable economically. Large tracts of corn and wheat have disappeared because many farmers can no longer make a living growing corn and wheat.

To maintain farms in Hunterdon, farmland must be put to a use that is economically viable. Rural settings might be the desirable endgame, but the mechanism to get there is quite another matter.

“You need a high-value crop,” Leitner told me. “I believe that vineyards are an important part of the future of Hunterdon.”

Seven years ago, Leitner started up Mount Salem Vineyards. It occupies 300-year-old farmland located at 54 Mount Salem Road near Pittstown.

“Contrary to what the experts used to think, Hunterdon is ideal (for vineyards), if you plant the right grapes,” Leitner said.

He has found the soil, the slope of the land, and the weather to be ideal for his vineyard. No French grapes here—they are Austrian and northern Italian.

The first vines were planted in 2005, and in 2010 he established the winery. There are now 6.5 acres of grapes.

The varietals produced here are the most appropriate for the local soils, he said. Reds include Blaufrankisch, St. Laurent, and Zweigelt (all Austrian) and Cabernet Franc (northern Italy). Whites are Riesling and Gruner Veltliner (both Austrian) and Pinot Grigio (northern Italy).

In addition to his estate-grown grapes, Leitner sources grapes from other New Jersey vineyards. These include four reds (Syriah, Dolcetto, Sangiovese and Nebbiolo) and one white (Traminette). Mount Salem also serves as a Rutgers University test site for 10 Italian varietals.

If you want to try your hand at wine making, there are some open-house sessions at Grape Finale, Raritan Township, coming up in March and April to introduce you to the process. Without owning a vineyard, you can make the wines you want — from crushing the grapes to labeling the bottle.

Grape Finale is Hunterdon’s first wine making school. It was established last year, and open houses are set for March 31, April 14 and 28, 2 to 6 p.m. This operation is at 8 Bartles Corner Road.

“People come here to purchase grapes, crush, press, and bottle wines,” said Lisa Van Den Woldenberg. “You can even order your own labels for holidays, gifts, corporate events. Some companies use their own logos.”

She helps people through the process of making their own wines. She does not teach, but she can supply everything you need for wine making. All the necessary equipment is on-site. Currently, some three dozen barrels of clients’ wines are in process from earlier pressings.

Wine can take months to mature. Grape Finale offers three different oak barrels — American, French and Hungarian. Each imparts a distinctive flavor to the wine.

“Right now, we’re getting ready to bottle the Chilean wines (from last year),” Van Den Woldenberg explained. “By June, we’ll be doing the Californian.”

Many people know by now that the term Champagne, which was used for years to refer to any sparkling white wine, is actually much more specific. An 1891 treaty legally reserved the name Champagne for just this purpose. However, even though through both world wars the brand was seen not just as an international treasure but a specific object of pride for the French by most people in the world, the proliferation of the name’s misuse to describe any sparkling white wine continued. This despite the fact that with international support the French authorities can seize any mislabeled shipment and destroy it to protect the brand. Since the formation of the European Union, which forced all the countries in Europe to come into complete compliance with the treaty, the issue has received more attention.

People now understand, for the most part, that the term Champagne can’t accurately be applied to any sparkling white wine. This has given rise to the popularity of other brands such as Prosecco. And to be reasonable, there is plenty of precedence and merit to the claim that the brand deserves to be protected by strict labeling regulations. Many other wines enjoy this degree of protection, such that international wine makers often must specify where their wine was grown as well as the variety of grape.

The reasoning is part commercial – protecting a brand gives owners the ability to market it more effectively and thus charge higher prices – and part science. Many grapes, especially those used for sparkling white wine, are very expressive of the minerals and elements in the water, soil, and air where they grew. Wine tasters with refined palettes can identify different regions of growth for the same grape and same wine production technique, even when all of them come from within France. So there is certainly something to the claim that Champagne from the specific region of France is physically different than other sparkling white wines.

The reality is that the United States, which produces a fair amount of sparking white wine and consumes a great deal as well, is slow to comply with the regulation. But few would suffer if the country began to enforce compliance. Those who own mislabeled brands will have to invest to change future labeling, but they are profiting from a high-jacked brand anyway, so as long as they aren’t forced to re-label bottles already in circulation and ready for shipping, it is not unreasonable. And consumers can learn the difference – those who can actually taste the supposed superiority of a sparkling white wine from Champagne, France can spend the extra for this exclusively-priced product, while everyone else can continue to celebrate with other, satisfactory brands and be no worse for it.

Hello friends. We have first dibs today on a killer new Renegade project from Trey Busch.

Only 40 cases of this are available. Because of our list’s long, strong support for the Renegade program, Trey has offered us as much of that 40-case chunk as we can handle. If we have demand for all 40 cases, we get all 40 cases. Any leftovers will be sold, as futures, to other restaurant/retail accounts. This wine will, for certain, be completely sold out by the time it hits the ground in Seattle (early March).

A quick reminder of what the Renegade program is all about: A winery is sitting on barrels of wine that it doesn’t want to release under its own label. In our current financial climate, there are a myriad of reasons why this could be the case. Regardless, Trey (whose main label is Sleight of Hand Cellars) purchases the barrels, bottles the wine under his Renegade label, and sometimes signs a non-disclosure agreement regarding the source of the juice.

In some cases, there is very little information about what’s in the bottle. In this case, I have managed to wrangle, cajole, beg a good bit of information out of the head renegade. Here’s what we know:

1. This is single-vineyard, and we know the (outstanding) vineyard source: StoneTree. I just wrote about this Wahluke Slope vineyard (located here), farmed by Tedd Wildman, a few weeks ago, and it’s amazing to see this site continue to skyrocket up the charts of important Washington vineyards.

2. We know the vintage, 2010, the first of two cool vintages in a row in Washington. A vintage that was nervewracking for most of the summer, it ended up with enough nice weather in autumn to turn the tables, becoming a potentially classic vintage in the mold of 1999: long hang-times, good ripeness at moderate alcohols, terrific acid set. Recall that StoneTree is one of the warmer sites in Washington. Warm site, cool year, balanced wine.

3. We know the barrel regimen: The wine spent 15 months in exactly two barrels, both of them 3-year-old French; not exactly neutral, but far from new.

4. We know this was originally intended for a winery in the Walla Walla Valley.

5. We know the wine will be delivered in early March and will not be available for reorder.

This is a seriously strong Malbec, strong enough that Trey has bottled it under the “Renegade Reserve” label. Where there have been many Renegade wines, I think you can count the number of Reserves on one hand.

Putting together this offering has been like something out of a John le Carre novel (Tinker, Tailor, Winemaker, Malbec?). Bits and pieces of information have emerged over time. A sample was overnighted to me from Walla Walla, arriving in an anonymous brown shipper. When I opened it, the bottle looked more suited to olive oil than wine and had a “Ray’s Boathouse 50th Anniversary” label on it.

But the juice inside was magic.

My issues with Washington Malbec have never been about quality; only about price. This bottle has both: high quality and competitive tariff. It’s a fine reminder of the potential that this grape has in Washington. When it’s at its best (like this bottle), it blurs the line between Malbec’s old-world home of Cahors and its new-world stronghold of Argentina. Here you get glimpses of a fine Cahors – a big rocky-mineral spine, chewy black-tea tannins – and the generosity of cocoa-dusted fruit we’ve come to expect from Argentine versions.

A beautiful wine to look at, it’s positively resplendent in its youthful, inky, glass-staining black-purple. The aromatics speak of something exotic to come: flinty minerals and mountain berries and violets and English breakfast tea. There is a sense of depth and palate-weight without heaviness; this exudes balance and class rare for an under-$20 tariff.

But studies have insisted that to see benefits, you would need to consume large amounts of the compound – more than is found in a bottle of wine.Now a new study suggests we could get the equivalent of large resveratrol doses from pills we already have- a class of drugs that are being tested for use as treatments for Alzheimer’s and Parkinson’s disease.The findings suggest these drugs, known as known as phosphodiesterase type 4 (PDE4) inhibitors, may provide a practical way to reap red wine’s benefits than consuming buckets of the stuff (which would certainly carry health risks).”[The study] reveals a novel utility for this class of drugs that hasn’t been explored before,” said study researcher Dr. Jay H. Chung, chief of the Laboratory of Obesity and Aging Research at the National Heart, Lung, and Blood Institute.However, the study was conducted in mice, and the results will need to be replicated in people.In the study, scientists aimed to figure out exactly how resveratrol, a compound in red wine, acts inside cells. They discovered resveratrol works in a different manner than previously thought.The study showed that resveratrol inhibits a protein known as phosphodiesterase type 4 (PDE4). That meant that resveratrol is a PDE4 inhibitor.Knowing that drugs called PDE4 inhibitors werebeing tested to treat Alzheimer’s, the researchers gave one such drug, called rolipram, to mice.They found the drug produced all the health benefits of resveratrol, including preventing diet-induced obesity and improving control over blood sugar levels.In studies on people, resveratrol has been shown to have anti-diabetes effects. If you’re looking for Solvang tasting rooms, two good bets are the Lucas & Lewellen Tasting Room and its sister tasting room, Toccata.

Both Solvang tasting rooms are operated by Lucas & Lewellen Vineyards, a small premium estate winery in Santa Barbara County named for its two owners, Louis Lucas and Royce Lewellen.

The two friends established the winery in 1996, but Louis Lucas had been growing premium grapes for wineries across California since 1970 before finally setting up his own winery.

Lucas and Lewellen have their vineyards planted to twenty-five different varietals. The Goodchild Vineyard in the Santa Maria Valley is cooled by maritime fog most mornings, and the area is renowned for having the longest growing season of any wine region in California.  The Los Alamos Vineyard, with more moderate temperatures, is north of Los Olivos and, at nearly 300 acres, is Lucas & Lewellen’s largest vineyard. Bordeauxvarieties thrive in the warmer Valley View Vineyard near the Santa Ynez River bed in the warm Santa Ynez Valley. All grapes are sustainably grown and hand-picked under the watchful eye of Louis Lucas and Megan McGrath Gates, who has been the Lucas and Lewellen Winemaker since 2007.  A graduate of the UC Davis winemaking certificate program, McGrath Gates describes her role in the winemaking process this way:

“My job is to allow the grapes to showcase their natural characteristics.”

Fine Sauvignon Blanc, Viognier, Riesling, Chardonnay, Petite Sirah, Pinot Noir, Syrah, Merlot, Cabernet Franc, and Cabernet Sauvignon are produced under the Lucas & Lewellen label and they also bottle other varietals and blends under the Toccata and Queen of Hearts labels.
